Sorn's Chocolate Mousse

Sorn, our friend and favorite cafe owner of Thailand is a man of the world. He's the founding editor of Thailand's amateur photography magazine, Focus, and he's lived and run restaurants around the world, including in London, New York and San Francisco. Every night at Sorn's was a pleasure, full of tales and laughter, and his place should not be missed by future travelers to this amazing city.

Sorn's Recipe: (Makes 6 normal servings) Cassidy and Samantha can attest to how wonderful this desert is, they had one every night that they could!

200 grams of chocolate (Use fine semi-sweet chocolate)
150-160 grams of unsalted butter
4 large eggs
1/5 tsp. of superfine sugar
3/4 oz of Cointreau
Pinch of salt
1 oz of fresh whole milk


Melt chocolate in a bowl over hot water
Add butter and melt together
After these melt and mix together, add 4 egg yolks


Take the bowl out of the hot water

Beat 4 egg whites with pinch of salt, superfine sugar
Add Cointreau
Keep beating until frothy and nice
Add the egg white mixture to the chocolate
Use spatula to mix
Add milk and mix


Cool it 4-6 hours, add some Thai (or other local) fruit to the top and serve
